Sicilian Pasta with Sardines and Beans

Ingredients

  • 160 g pasta (spaghetti or bucatini)
  • 1 tbsp olive oil
  • Zest of 1 whole lemon
  • 50 g frozen green beans , thawed
  • 1 medium white onion , chopped
  • 2 pinches chili pepper flakes
  • A handful of raisins or sultanas
  • 1 120 g can of sardines
  • Fresh parsley , chopped for garnish

Steps

  1. Meanwhile, in a skillet heat the oil. Sautee the garlic, pepper flakes and onions. Add most of the lemon zest, reserving just a little for garnish. Mix in the sultanas and continue stirring until onions become translucent and mixture is aromatic.
  2. Mix the green beans into the pan and then add the sardines. As you stir, begin to break up the fish into tiny pieces.
  3. Drain the pasta roughly and toss into the pan including some of the pasta water. Sautee until well coated in oil.
  4. Transfer to serving dish, garnish with lemon zest and parsley.
  5. Serve.
