Ingredients
- 160 g pasta (spaghetti or bucatini)
- 1 tbsp olive oil
- Zest of 1 whole lemon
- 50 g frozen green beans , thawed
- 1 medium white onion , chopped
- 2 pinches chili pepper flakes
- A handful of raisins or sultanas
- 1 120 g can of sardines
- Fresh parsley , chopped for garnish
Steps
- Meanwhile, in a skillet heat the oil. Sautee the garlic, pepper flakes and onions. Add most of the lemon zest, reserving just a little for garnish. Mix in the sultanas and continue stirring until onions become translucent and mixture is aromatic.
- Mix the green beans into the pan and then add the sardines. As you stir, begin to break up the fish into tiny pieces.
- Drain the pasta roughly and toss into the pan including some of the pasta water. Sautee until well coated in oil.
- Transfer to serving dish, garnish with lemon zest and parsley.
- Serve.
