Ingredients

  • 2 medium carrots , peeled and grated
  • 1 cup spinach , chopped
  • 1 lean ground beef
  • 2 cups marinara sauce
  • 1 cup cottage cheese
  • 1 large egg
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • ¼ cup Parmesan cheese , grated
  • 1¼ cup mozzarella cheese , shredded
  • 6 oz lasagna noodles , uncooked

Steps

  1. Preheat oven to 375°F.
  2. In a large skillet, brown the beef over medium heat. Stir with a wooden spoon to break up the meat. Remove from heat, and drain the fat.
  3. Add the marinara sauce, carrots, and spinach in the skillet, and stir. Cook until warmed through. Remove from heat.
  4. Place the cottage cheese, egg, basil, oregano, parmesan, and 1 cup of the mozzarella in a bowl. Mix until combined.
  5. Spread some of the meat sauce on the bottom of an 8 x 8-inch baking dish. Cover with 3 pieces of uncooked lasagna noodles.
  6. Spread an even layer of the cheese mixture over the noodles. Spread meat sauce on the cheese layer, and then add another layer of noodles. Continue until all of the meat and cheese mixture have been used. Top the last layer with the remaining ¼ cup of mozzarella.
  7. Cover the baking dish with foil. Place it in the oven to bake until bubbly, around 40 minutes. Remove the foil and leave to bake for another 5 minutes.
  8. Place the lasagna on a cooling rack and let sit about 5 minutes before serving.
