Turkey and Bean Burrito

Ingredients

  • 2 tbsp grapeseed oil
  • 1 tbsp garlic , chopped
  • 1 cup white onion , chopped
  • 1 pound ground turkey
  • 1 can of sodium-free black beans
  • ½ tsp dried oregano
  • 1 tbsp chili powder
  • 1 cup chicken stock
  • 3/4 cup grated cheddar cheese
  • 6 large whole wheat tortillas
  • 1/4 cup chopped fresh cilantro
  • 3/4 cup salsa
  • 1 ripe avocado , peeled and sliced

Steps

  1. Preheat the oven to 218°C. Grease a baking dish.
  2. In a large skillet, heat oil. Sautee chopped onions on medium high heat until it’s translucent.
  3. Add chili and garlic powder, stirring to combine evenly.
  4. Lower the heat to medium and mix in the ground turkey. Sauté for 5 minutes.
  5. Add beans, oregano and chicken stock. Increase the heat back to medium high and simmer for 5 minutes or just until the liquid cooks off.
  6. Divide into six portions and fill in the tortillas evenly. Sprinkle some cheese and a few slices of avocado.
  7. Roll and tuck the burrito. Arrange carefully on the baking dish, seam-side down
  8. Spread a spoon of the salsa on the burritos and top with the remaining cheese. Bake for 20 minutes or until the cheese melts and bubbles.
  9. Garnish with cilantro and serve.
