Ingredients
- 2 tbsp grapeseed oil
- 1 tbsp garlic , chopped
- 1 cup white onion , chopped
- 1 pound ground turkey
- 1 can of sodium-free black beans
- ½ tsp dried oregano
- 1 tbsp chili powder
- 1 cup chicken stock
- 3/4 cup grated cheddar cheese
- 6 large whole wheat tortillas
- 1/4 cup chopped fresh cilantro
- 3/4 cup salsa
- 1 ripe avocado , peeled and sliced
Steps
- Preheat the oven to 218°C. Grease a baking dish.
- In a large skillet, heat oil. Sautee chopped onions on medium high heat until it’s translucent.
- Add chili and garlic powder, stirring to combine evenly.
- Lower the heat to medium and mix in the ground turkey. Sauté for 5 minutes.
- Add beans, oregano and chicken stock. Increase the heat back to medium high and simmer for 5 minutes or just until the liquid cooks off.
- Divide into six portions and fill in the tortillas evenly. Sprinkle some cheese and a few slices of avocado.
- Roll and tuck the burrito. Arrange carefully on the baking dish, seam-side down
- Spread a spoon of the salsa on the burritos and top with the remaining cheese. Bake for 20 minutes or until the cheese melts and bubbles.
- Garnish with cilantro and serve.
