Ingredients

  • 1 cup soy sauce
  • 1 cup Sugar
  • 3 tbsp mirin
  • 4 garlic cloves , peeled and finely minced
  • 1½ inch piece fresh ginger, peeled and finely grated
  • 1½ lbs flank steak , thinly sliced across the grain into long strips
  • 3 cups steamed rice , for serving

Steps

  1. Make the marinade: in a bowl, whisk together the soy sauce, sugar, mirin, garlic, and ginger. Add the meat, and toss to evenly coat. Cover with a plastic wrap and marinate in the refrigerator for 2 to 3 hours.
  2. Soak 8 bamboo skewers in water for at least an hour. You can weigh them down with a bowl to keep from floating to the surface.
  3. Preheat the broiler. Line a rimmed baking sheet with foil, shiny side down, and grease with oil.
  4. Thread the marinated meat onto the skewers. Set them on the baking sheet. Broil for 1 to 2 minutes each side, until the meat is browned and cooked through.
  5. Serve with steamed rice.
