Ingredients

  • 1 whole chicken, cut into serving pieces
  • 1 tbsp canola oil
  • 1 onion, peeled and chopped
  • 3 cloves garlic, peeled and minced
  • 4 tbsps fresh ginger, peeled and minced
  • 2 tbsps fish sauce
  • 1 cup uncooked rice (bigas)
  • 6 cups water

  • 3 hardboiled eggs, peeled and halved For the Toppings
  • 1/4 cup fried garlic bits
  • 1/4 cup green onions, chopped
  • Calamansi or lemon, cut into wedges
  • Fish sauce to taste

Steps

  1. Tanggalin ang taba ng manok. Banlawan at i-drain ng maigi. Sa isang pot nasa medium heat, ilagay ang oil. Idagdag ang onions, luya at bawang. Ihalo-halo lang hangang malabot at aromatic.
  2. Idagdag ang manok, at haluin hangnag lightly browned at may mga juices. Idagdag ang patis (fish sauce) at lutuin ng 1-2 minutes.
  3. Idagdag ang bigas, at patuloy paghalo ng mga 1-2 minutes o hangang mag-brown ng konti ang bigas. Idagdag ang tubig at i-boil. Tanggalin ang "scum" na nasa ibawbaw.
  4. Idagdag ang boullion para ma-dissolve.
  5. Bawasan ang init, takpan at i-simmer. Haluin ulit hangang lumambot ang kanin/bigas, at lumapot na. Lagyan ng salt at pepper to taste.
  6. Ilagay sa mga bowls. Lagyan ng toppings ng toasted na bawang, hard boiled egg, green onions. Ilagay ang patis at calamansi o lemon sa tabi.
