Ingredients
- 1 whole chicken, cut into serving pieces
- 1 tbsp canola oil
- 1 onion, peeled and chopped
- 3 cloves garlic, peeled and minced
- 4 tbsps fresh ginger, peeled and minced
- 2 tbsps fish sauce
- 1 cup uncooked rice (bigas)

- Calamansi or lemon, cut into wedges
- Fish sauce to taste
Steps
- Tanggalin ang taba ng manok. Banlawan at i-drain ng maigi. Sa isang pot nasa medium heat, ilagay ang oil. Idagdag ang onions, luya at bawang. Ihalo-halo lang hangang malabot at aromatic.
- Idagdag ang manok, at haluin hangnag lightly browned at may mga juices. Idagdag ang patis (fish sauce) at lutuin ng 1-2 minutes.
- Idagdag ang bigas, at patuloy paghalo ng mga 1-2 minutes o hangang mag-brown ng konti ang bigas. Idagdag ang tubig at i-boil. Tanggalin ang "scum" na nasa ibawbaw.
- Idagdag ang boullion para ma-dissolve.
- Bawasan ang init, takpan at i-simmer. Haluin ulit hangang lumambot ang kanin/bigas, at lumapot na. Lagyan ng salt at pepper to taste.
- Ilagay sa mga bowls. Lagyan ng toppings ng toasted na bawang, hard boiled egg, green onions. Ilagay ang patis at calamansi o lemon sa tabi.
