Ingredients
- 1 tsp butter , salted
- 2 tsp taco seasoning
- ½ cup quinoa–cooked per directions
- ½ can sweet corn
- ½ cans black bean
- 1 cup salsa of choice
- 1 tbsp lime juice
- ¼ cup cilantro , chopped
Steps
- In a small pot, cook quinoa following packaging directions (7-10mins).
- Meanwhile, in a skillet, heat butter and add in boiled chicken shreds. Sprinkle with taco seasoning. Transfer to a mixing bowl.
- Mix the rest of the ingredients, the quinoa added last.
- Serve.
