Chicken Taco Quinoa

Ingredients

  • 1 tsp butter , salted
  • 2 tsp taco seasoning
  • ½ cup quinoa–cooked per directions
  • ½ can sweet corn
  • ½ cans black bean
  • 1 cup salsa of choice
  • 1 tbsp lime juice
  • ¼ cup cilantro , chopped

Steps

  1. In a small pot, cook quinoa following packaging directions (7-10mins).
  2. Meanwhile, in a skillet, heat butter and add in boiled chicken shreds. Sprinkle with taco seasoning. Transfer to a mixing bowl.
  3. Mix the rest of the ingredients, the quinoa added last.
  4. Serve.
