Old-Fashioned Beef Casserole

Ingredients

  • 1 medium onion , sliced
  • 1½ tbsp vegetable oil
  • 8 oz lean stewing beef , cut into chunks
  • 2 medium carrots , peeled and sliced
  • 1 large potato , peeled and diced
  • 1 tbsp fresh parsley , chopped
  • 2 cups unsalted chicken or beef stock

Steps

  1. Preheat the oven to 300°F. In a flameproof casserole, sauté the onion in the oil until lightly golden. Add the beef, and sauté until browned. Stir in the carrots, potato, and parsley. Pour in the stock, and bring to a boil.
  2. Cover the casserole and transfer to the oven. Bake for about 2 hours, or until the meat is tender. Add extra stock if necessary.
  3. For older babies, chop into small pieces. For younger babies, you may transfer everything into a blender or food processor, and puree.
