Spicy Szechuan Chicken

Ingredients

  • 4 chicken thigh fillet , chopped into bite-sized pieces
  • Vegetable oil
  • 1 tbsp sesame oil
  • ½ tbsp rice wine
  • ½ tsp Sugar
  • 5 red fresh chili , chopped
  • 50 whole dried red chilis
  • 1 tsp ginger , sliced
  • 1/3 cup peanuts
  • 3 tsp Cornstarch
  • 1 tsp salt
  • 1 tbsp rice wine
  • ½ tsp white pepper
  • 1 tbsp soy sauce
  • 1 stalk scallion , chopped
  • 2 slices ginger

Steps

  1. In a mixing bowl, add all marinade ingredients and combine well. Add the chopped chicken and coat evenly. Marinate for at least 10 minutes.
  2. In a medium saucepan, heat about until 4 cm of the pan with oil. Saute the chicken until browned. Set aside.
  3. In a larger pan, heat oil. Fry the peppercorns and dried red chilis until aromatic.
  4. Mix in scallions, ginger, peanuts and the rest of the dried red chilis. Stir fry for about a minute.
  5. Add the fried chicken pieces, sugar, rice wine and sesame oil. Toss well to coat.
  6. Garnish with chopped scallions and serve.
