Ingredients
- 4 chicken thigh fillet , chopped into bite-sized pieces
- Vegetable oil
- 1 tbsp sesame oil
- ½ tbsp rice wine
- ½ tsp Sugar
- 5 red fresh chili , chopped
- 50 whole dried red chilis
- 1 tsp ginger , sliced
- 1/3 cup peanuts
- 3 tsp Cornstarch
- 1 tsp salt
- 1 tbsp rice wine
- ½ tsp white pepper
- 1 tbsp soy sauce
- 1 stalk scallion , chopped
- 2 slices ginger
Steps
- In a mixing bowl, add all marinade ingredients and combine well. Add the chopped chicken and coat evenly. Marinate for at least 10 minutes.
- In a medium saucepan, heat about until 4 cm of the pan with oil. Saute the chicken until browned. Set aside.
- In a larger pan, heat oil. Fry the peppercorns and dried red chilis until aromatic.
- Mix in scallions, ginger, peanuts and the rest of the dried red chilis. Stir fry for about a minute.
- Add the fried chicken pieces, sugar, rice wine and sesame oil. Toss well to coat.
- Garnish with chopped scallions and serve.
