Bacon, Mushroom, and Spinach Omelet

Ingredients

  • 1/4 cup fresh button mushrooms, sliced
  • 2 tsp olive oil
  • 2 strips of cooked bacon (or more)
  • 1/4 cup
  • 2 eggs, use yolks, beaten
  • 1 tbsp fresh milk
  • Salt, to taste

Steps

  1. Combine fresh button mushrooms and olive oil in a microwaveable bowl. Cook on high for 30 seconds.
  2. Add cooked bacon (sliced), spinach, eggs, milk, and salt and pepper to the bowl. Microwave on high for 1 1/2 minutes or until completely cooked, slightly stirring mixture halfway through.
