Ingredients
- 1/4 cup fresh button mushrooms, sliced
- 2 tsp olive oil
- 2 strips of cooked bacon (or more)
- 1/4 cup
- 2 eggs, use yolks, beaten
- 1 tbsp fresh milk
- Salt, to taste
Steps
- Combine fresh button mushrooms and olive oil in a microwaveable bowl. Cook on high for 30 seconds.
- Add cooked bacon (sliced), spinach, eggs, milk, and salt and pepper to the bowl. Microwave on high for 1 1/2 minutes or until completely cooked, slightly stirring mixture halfway through.
