Steamed Chicken Dumplings

Ingredients

  • 200 g ground chicken
  • 100 g water chestnuts , diced, drained, and rinsed
  • 2 spring onions , diced
  • 1 garlic clove , finely chopped
  • 1 tsp soy sauce
  • 1 tsp rice wine vinegar
  • 1 tsp lime juice
  • 2 tbsp coriander leaves , finely chopped
  • 20 fresh wonton wrappers
  • DIPPING SAUCE:
  • 1½ tbsp lime juice
  • 1½ tbsp lemon juice
  • 2 tbsp soy sauce

Steps

  1. In a large bowl, mix the chicken, water chestnuts, spring onions, garlic, soy sauce, rice wine vinegar, lime juice, and coriander.
  2. Lightly flour your hands. Hold a wonton wrapper in one hand. Place a teaspoonful of the chicken mixture in the middle of the wrapper. Using your other hand, bring the opposite corners together, pinching the edges to seal. Dip your fingers in water and press the edges tightly to seal. Make sure there is not excess air inside the dumpling.
  3. Boil 2 inches of water in a saucepan. Lay baking/cooking paper on top of a steaming basket or bamboo steamer. Arrange as many dumplings as you can in the steaming basket, making sure they do not touch. Steam for 10-12 minutes. Remove from heat.
  4. Make the dipping sauce: whisk all ingredients together.
