No-bake chocolate cheesecake

Ingredients

  • 130 g butter, melted, plus extra for the tin
  • 300 g chocolate digestive biscuits
  • 150 g milk chocolate
  • 150 g dark chocolate
  • 250 g mascarpone
  • 300 g cream cheese (don’t use a low-fat variety)
  • 50 g icing sugar
  • 25 g malted milk drink powder (we used Horlicks)
  • 25 g hot chocolate powder
  • 1 tsp vanilla extract
  • 300 ml double cream (or thick cream)
  • 150 g Maltesers (100g chopped, 50g whole), plus a handful to decorate
  • 100 g chocolate buttons, roughly chopped

Steps

  1. I-butter at ang isang 23cm springform cake tin. Blitz ang mga biscuit sa food processor hangang maging "fine crumbs," idagdag ang butter, at blitz ulit. Lagay ang biscuit mixture sa cake tin at idiin. Chill sa fridge habang ginagawa ang filling.
  2. Sa ibang bowls, itunaw yun milk at dark chocolate sa ibabaw ng gently simmering hot water. O puwede din tunawin sa microwave sa 30-second bursts, at hinahalo ang choclolate tapos ng bawat 30sec. hangang melted. Itabi para lumamig.
  3. Gamitin ang hand whisk para mahalo ang mascarpone, cream cheese, icing sugar, malted milk drink powder, hot chocolate powder at vanilla extract hangang smooth. Sa ibang bowl, i-whisk ang cream, at i- fold sa mascarpone mixture. Hatiin ang mixture sa dalawang chocolate bowls, hangang smooth. Haluin din ang kalahati ng chopped Maltesers, whole Maltesers at buttons sa milk chocolate mixture; at ihalo yun iba sa dark chocolate mixture.
  4. Ilatag ang dark chocolate mixture sa biscuit base. Tapos idagdag yung milk chocolate mixture at smooth sa taas. Chill overnight. Decorate with Maltesers before serving.
