Ingredients
- For the fritters:
- 2 Granny Smith apples, peeled, cored, halved, and cut into 1/4 –inch pieces
- 2 cups all-purpose flour
- ½ cup granulated sugar
- 1 tbsp baking powder
- 1 tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- ¾ cup apple cider
- 2 large eggs , lightly beaten
- 2 tbsp unsalted butter , melted
- 3 cups vegetable oil
- For the glaze:
- 2 cups confectioners sugar
- ¼ cup apple cider
- ½ tsp ground cinnamon
- 1/2 tsp ground nutmeg
Steps
- Arrange the apples in a single layer on a paper towel-lined baking sheet. Pat dry paper towels.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk together the cider, eggs, and melted butter.
- Toss the apples in the flour mixture until well-coated. Stir in cider mixture until combined.
- Place a wire rack on top of a baking sheet. In a dutch oven, heat the oil over medium-high heat, up to 350°F. Using a 1/3-cup measuring cup and spoon, very carefully place 5 portions of the batter in the oil. Press the batter lightly with the back of a spoon to flatten. Fry until fritters are golden brown, about 2 to 3 minutes per side. Transfer cooked fritters onto the prepared wire rack. Fry the rest of the batter.
- Make the glaze: whisk all glaze ingredients in a medium bowl until smooth. Top each fritter with 1 tbsp of the glaze, letting it set for about 10 minutes before servings.
