Ingredients
- 1 tbsp butter
- Pinch of ground coriander
- 50 g split red lentils , rinsed
- 375 g sweet potatoes , peeled and chopped
- 1-2 tbsp yogurt
Steps
- Melt the butter in a saucepan. Add the coriander, and cook for 1 minute. Stir in the lentils and potatoes. Pour just enough water to cover all ingredients. Bring to a boil, then cover and simmer for 15 minutes.
- Remove from heat. Drain. Transfer the mixture into a blender or food processor, and puree until smooth. Stir in yogurt before serving.
