Monte Cristo Sandwich

Ingredients

  • 4 large eggs
  • ½ cup heavy cream
  • 2 tsp Sugar
  • ½ tsp salt
  • ½ tsp dry mustard
  • 1/8 tsp cayenne pepper
  • 6 tbsp strawberry or raspberry jam
  • 2 tbsp Dijon Mustard
  • 12 slices white sandwich bread, lightly toasted (serves 6)
  • 18 thin slices of deli Swiss or Gruyere cheese
  • 12 thin slices of deli ham
  • 12 thin slices of deli turkey
  • 3 tbsp vegetable oil
  • Confectioner’s sugar

Steps

  1. Preheat the oven to 450°F.
  2. In a shallow dish, whisk together the eggs, cream, sugar, salt, dry mustard, and cayenne. In a separate bowl, mix together the Dijon mustard and jam.
  3. Spread 1 tsp of the jam mixture on 1 side of each slice of toast. On 6 slices of toast, layer slices of cheese, ham, and turkey over jam. Repeat with a second layer of cheese, ham, and turkey. Add the final layer of cheese, and top with remaining toast, with the jam side facing the cheese. Lightly press down on the sandwiches.
  4. Place the oil into a rimmed baking sheet and heat in the oven until smoking, about 7 minutes.
  5. Using both hands, coat each sandwich with the egg mixture, and transfer to a large plate. Transfer the sandwiches into the preheated baking sheet, and bake for 8 to 10 minutes, until golden brown, making sure to flip them halfway through baking.
  6. Remove from heat. Sprinkle with confectioner’s sugar and serve immediately.
