Super Healthy Breakfast Crepes

Ingredients

  • CREPES:
  • 1 cup milk
  • 3 large eggs
  • 1 cup all-purpose flour
  • 4 tsp Sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • Cooking spray
  • FILLING:
  • 1 cup blueberries
  • 1 medium kiwi
  • 2 cup strawberries
  • 1 cup plain Greek yogurt

Steps

  1. Combine the milk, eggs, flour, sugar, cinnamon, vanilla, and salt in a blender. Blend on high until just incorporated, about 30 seconds. Scrape the sides with a spatula as needed.
  2. Coat an 8-inch skillet with cooking spray. Place over medium heat. Pour ¼ cup of the batter into the skillet, and swirl to coat the bottom. Cook until brown, about 1 ½ minutes. Flip the crepe, and cook for 30 more seconds. Continue until all the batter is used. Set crepes aside.
  3. Make the filling: chop the kiwi and strawberries into bite-sized pieces. Mix these with the yogurt and blueberries. Spread the filling in the center of each crepe. Fold one side of the crepe to the center, and the opposite side towards the center as well (as if “enveloping” the filling.) Serve.
