Sweet Potato Waffles

Ingredients

  • 1½ cups whole wheat, white whole wheat, or all-purpose flour
  • 1 cup quick-cooking oats
  • 3 tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 2 eggs
  • 1 cup whole milk
  • ½ cup plain whole fat yogurt
  • 4 ounces sweet potato puree
  • 2 tbsp brown sugar

Steps

  1. Place the flour, oats, baking powder, cinnamon, and salt in a large bowl. Whisk until well-combined.
  2. In a separate bowl, whisk together the eggs, milk, yogurt, puree, and brown sugar. Make a well in the middle of the flour mixture, and pour the wet ingredients in. Whisk them all together until combined, but still a bit lumpy. Set aside.
  3. Preheat your waffle maker for 10 minutes. Check the batter: if it’s too thick, add 1-2 tbsp of milk.
  4. Grease the waffle maker and pour in 2 tbsp of batter for babies, and ¼ cup of batter for toddlers. Cook based on your waffle maker directions. Serve, or freeze for future meals.
